Full Throttle Saloon opens with buffet and bar in Sault

'When I do something I go full throttle,' says Rosa Carello about her decision to open her own business after three decades behind the bar. Her new saloon offers a buffet for hungry customers

Full Throttle Saloon, owned and operated by the Sault’s Rosa Carello and located on the site of the Primavera Banquet Hall on Wellington Street West, will open with a soft launch Monday, Nov. 17.

Though it will be an establishment in which people can enjoy alcoholic beverages during regular bar hours, Full Throttle Saloon will also have a buffet with plenty of food for its customers to enjoy.

“The menu will include Italian food at its best,” Carello told SooToday.

“On Mondays there will be pasta, meatballs, and salad. Tuesday is roast chicken, roasted potatoes and salad. Wednesday is chicken parmesan and gnocchi. Thursday is wing night. Friday is fish fry. Saturday is lasagna and salad and Sunday will be roast beef, mashed potatoes, gravy and salad. A small carafe of non-alcoholic beverages will be included and that could include pop or juice,” Carello said.

Full Throttle Saloon’s buffet will run seven days a week.

The lunch buffet will operate from 12-2:30 p.m. while the dinner buffet will run from 4-8 p.m.

Primavera Banquet Hall will be winding down as a banquet hall but its longtime chef Ada Scanga will be still doing catering while working for Carello.

“Ada’s been a chef for over 50 years. I'm so happy she’s on board,” Carello said.

Why did Carello pick the name ‘Full Throttle Saloon?’

“People automatically assume ‘biker.’ Everybody says ‘it's a biker bar’ but no, not at all. The reason it's called full throttle is because when I do something I do it 100 per cent, no holds barred. When I do something I put all of my heart into it,” Carello said.

After its soft launch, Full Throttle Saloon's regular business days will follow and an official grand opening with a live band will take place Friday, Nov. 28 and Saturday, Nov. 29.

“I've been a local bartender for over 30 years. I decided that I would give it a go because I'm a hard worker and after working for others I thought, ‘I could probably do this for myself,’” Carello said.

And she wants to do it right.

“I've watched and learned how businesses were run. I feel that I've been in the business long enough to know how to run a business successfully. I've learned to know what customers appreciate and how they want to be treated.”

Carello has also operated a photography studio and clothing business over the years.

Full Throttle Saloon will have a full bar of wines, liquor and draft beer on tap.

The establishment will have big screen TVs, a pool table, an air hockey table, a large dance floor and a VIP room that customers can reserve.

VIP room customers will have their own bartender, a sofa, big screen TV and a fireplace.

“It’ll offer a calming and amazing vibe,” Carello said.
